Cupcakes from the past few months...

So I've been a slacker lately. Not in the making cupcakes department, but in the putting the pictures online department. So here's what I've been making lately....

PEANUT BUTTER AND JELLY CUPCAKES

MMM Peanut Butter and Jelly. I don't remember where I got the recipe from, but it was amazing. 
And they even had strawberry jelly inside!!

FRENCH TOAST BACON CUPCAKES


French Toast Bacon Cupcakes. Holy cow. I didn't think a cupcake could ACTUALLY taste like French toast....but they did.









I thought the bacon on the top was totally weird, and not good. But they were good without the bacon!

VODKA CUPCAKES

So I made the mistake of continually adding vodka to the frosting. These seriously tasted like a shot of vodka. I used UV Cake flavored vodka in the cake, and cherry flavored vodka in the frosting. And I have no idea what recipe I used, but I just substituted vodka in the place of water in both the frosting and the cake mix.

GIANT CUPCAKE



Ethan was sick of me making homemade cupcakes and frosting, all he wanted was a mix and store bought frosting, so I made him this giant chocolate/vanilla frosting cupcake, and also put chocolate frosting inside. He loved it. 





KOOL AID

I can't find the original recipe I used for this cupcake either, but you just add Kool Aid to the frosting and cake mix. I used Black Cherry flavor. A little too much Black Cherry in the frosting.


CHOCOLATE CHIP COOKIE CUPCAKES

These were pretty awesome. Just plain yellow cake, vanilla frosting, mini chocolate chips.

With chocolate chip cookie batter baked in the middle! Yum.

RED VELVET

This one was another Ethan request. Plain old red velvet with creme cheese frosting.

With a healthy dose of chocolate frosting on the inside!

ORANGE SODA

I may have already added these before. But they were my favorite, so that's okay. Recipe can be found here. I strongly recommend making these if you love orange soda.

HALLOWEEN CUPCAKES

Erin and I made these for Halloween. The recipe is from the Wilton website.

BEEHIVE CAKE

So this looked a little better before I tried to put an extra layer of frosting on it. But I made this for Erin's birthday using the giant cupcake pan.

I was chocolate cake with creme cheese frosting and creme cheese frosting in the middle.

I have lots more to add, but the pictures aren't downloaded onto my computer yet, so we'll save those for another time. And I got some great cupcake decorating books, so the upcoming ones are more for looks, not so much for taste. (which I'm sure my taste testers aren't too fond of!)

PINK LEMONADE CUPCAKES!

I found this recipe at Erica Sweet Tooth. There's also a similar one on the Wilton website. Another lemon-y recipe, but a declicious one!


I dyed my frosting pink, because the pink lemonade concentrate made the frosting a really ugly color, and of course I added sprinkles. I did yellow and white on some, and just white on the others. I didn't dye the cake batter at all, but I think pink or yellow dye would look good.

And, I added more pink lemonade concentrate (and water) to thin the frosting.


I cut regular bendy straws to decorate them, I cut the top part of the straw also, otherwise they looked goofy.

Trifle?

I've never made a trifle before, I don't think I've ever even heard of a trifle before. I found this recipe on the Kraft website. And once again, I picked a recipe that calls for lemon pudding mix, so I used one lemon pudding mix and one vanilla pudding mix, so it would turn out less lemon-y. The website also says you can use any kind of pudding you want, so I probably should have used all vanilla, but being the first time I made the recipe, I didn't want to change it too much. I also used WAY more fruit (as in about 2 1/2 cups more) than the recipe called for, and added kiwi and blackberry. I'm pretty sure you could use any fruit you wanted, I thought about adding nuts also, but once again, didn't want to get too crazy the first time. There are a bunch of different trifle recipes on the website, I also want to try the one with brownies and raspberries in it. Chocolate, chocolate, yeah.

So my layering didn't turn out the best, but that's okay.... I also haven't even tried this yet, since I made it to take to a friend's house for dinner tonight. It smelled like a lemon explosion, so I'm kind of nervous to try it....

Alright, I ate it, it was awesome (even with the lemon pudding mix) However, it was really fruity, so those 2 cups extra fruit was a little over kill, and next time I would put more Nilla wafers in it. Probably another flat layer where the other ones are up the sides.

Two of my favorite things!

MOUNTAIN DEW and CUPCAKES!!

I found a recipe for Mountain Dew cupcakes at nothingbutcountry.com, so I obviously HAD to make them. 

They turned out a little too lemon-y for me. The recipe calls for lemon cake mix AND lemon pudding mix, so I think next time I will leave out the pudding mix. But I still thought they were pretty delicious.... 


I did think the frosting tasted AMAZING, you can taste the Mountain Dew more in the frosting than in the actual cupcake. 


And I put green and yellow dye in the bag, to get the stripes in the white frosting! I only did 2 stripes, instead of 4 like the website originally showed. I think these were the first cupcakes that I didn't even use sprinkles on! YUMM

If you like Mountain Dew and lemon flavoring, you definitely need to try these cupcakes! Next up: Orange Crush cupcakes!! (or possibly S'more, we'll see)

SUMMER-Y CUPCAKES!!




Corn on the cob CUPCAKES! I saw these in a cupcake book, and I think they're currently on the cover of Taste of Home, or Women's Day, or some sort of magazine...I used a yellowish/gold frosting, several different types of jelly bellys, black sprinkles and sugar for the salt and pepper, and a Starburst for the butter slice. I microwaved the Starburst for a few seconds and molded it a little bit. 

The pictures aren't the greatest, but you get the idea. I gave these to my boss for his birthday. 

These were the leftovers from the corn on the cobs....nothing exciting, 
just added some sprinkles, because I love sprinkles!

Chocolate Marshmallow Cupcakes

I found a chocolate marshmallow cupcake recipe, but I changed it a little bit. I dyed the marshmallow frosting blue because I thought white was just too boring, but I suppose it would have been fine, considering it's marshmallow flavored frosting and all. I also added just plain white sprinkles. 

The original recipe called for marshmallow frosting on the inside also, but I did just straight up marshmallow fluff for the filling, and marshmallow frosting for the tops.

My first cake attempts.

Here's some of the first cakes I did. As of right now I cannot figure out how to get pictures onto the computer off my old phone, but these are the ones that were already on the computer. If I ever figure it out, I'll add the others.

This cake was DELICIOUS! I made it for my Mom's Bday, The layers are: cherry, pistachio, and plain layer thrown in there. With plain old vanilla buttercream frosting.

 I made at Dairy Queen.  It's much more funny if you know Ethan, and can see the 
details I made on the little guy. haha

First attempts at cake balls...

I'm starting this to keep all of my baking pictures together in one place, while I probably won't add only baking related pictures/blogs, deal with it. I am by far no professional, it's just something I enjoy doing. For now I don't think I am going to include the recipes I used, but if I find them online I will include the link to where I found it. Otherwise, if you want the recipe for something else you see, just let me know!

The first added pictures will be some cake balls I made. I found them on http://www.bakerella.com/category/pops-bites/cake-pops/.  I LOVE cake pops, they're small, they're fun, what more could you ask for? Bakerella's website is full of baking ideas, (not just cake balls) so be sure to check it out!

I made the grooms with chocolate cake, so they wouldn't be all vanilla. 

Easter Cake Balls! I think I made the cake pink on these, which
was completely unnecessary, I just wanted an Easter-y color on
the inside. 

The Bunnies didn't turn out quite how I wanted them to...
